Have you realized that whenever we plan to have a ‘Mughlai Meal’, our plates are always incomplete without the aromatic melt–in–mouth tikki’s you will be surprised to know that they were born in this region. The biggest gift of the unification of Awadh and Afghan cuisine is the yummy delicious, ‘Tikkis’. Infact there is an interesting story behind it.
We all know that the Nawabs were very fond of hunting and they would go out with their complete ‘Lashkar’ for hunting. Nawabs used to enjoy eating their prey as well but they could carry bare minimum kitchen arrangements in these trips. Moreover, it is essential to marinate meat for a long time to make its mouth melt. Thus it used to take a lot of time to cook this prey. So to satisfy the impatience of the Nawabs, the khansamas discovered a new technique which excluded the long-standing period of marination and instead started mincing the meat. This gave birth to our most famous ‘Tikkis; from the royal kitchen which rules our hearts even today.
Another delicacy of Rampuri cuisine is luscious dum biryani. It is an exclusive technique of preparing biryanis where the subtle flavours of spices are locked through ‘dum’ l.e steam. In this style the rice and meat are cooked separately, then the layering with spices is done and again it is cooked for some time.
